It may be snowing and cold. I may have lost my winter jacket...it's no where to be found. But I am inside watching the white cover the ground. Snow has a way of nature look clean...like a fresh canvas!
I am starting to go through my favorite Christmas recipes and deciding what I'd like to make this season. I love to make cut-out cookies, gingerbread houses, caramel popcorn, Rachael Ray's triple chocolate fudge, Rocky Road squares, Rolo cookies (oh, yum-o!), and of course, the family favorite...Puppy chow! (thanks to my friend, Roxie!) These are just a few off the top of my head! What kinds of Christmas baking do you do? I'd love to hear what recipes fill your containers this season.
I am looking for a recipe for cheesecake squares this year too....something with caramel on it...doesn't that sound good?
I would like to try some appetizers that freeze well too. Last year, I made two really yummy cheeseballs and stuck them in the freezer, thinking they'd be okay...and they were awful. May that be my reminder and a warning to you if are debating to do such.
If you are looking for a simple Christmas treat, try this...it is so good! I will not include the calorie counter!
Cuban Lunch
2 cups Rose Buds (not Rosettes)
1 pkg (300 grams) peanut butter chips
1 cup finely chopped pecans
200 grams crushed ripple chips
Melt chocolate and peanut butter chips in a double boiler.
Then add the rest of the ingredients.
Spoon the chocolate mixture into mini muffin liners.
And they freeze well...if they make it there!

mmm, yes, puppy chow!! i often forget about that one, but it's such a good nibbley sweet treat. i'm thinking i won't do much baking this Christmas, because keegan and i are the only ones who'll eat it and that is just no good!! it lasts far too long...er, it disappears far too quick and that is dangerous. :)

We like to do almond honey tort, gingerbread people, chocolate truffles (rolled in crushed peanuts or coconut), biscotti.
Our problem is that i have a VERY small fridge freezer, and no deep freeze. So i need to either make everything fresh right before we eat it, or make things that dont need freezing (biscotti stores really well at room temp). No chance putting the pails of cookies outside in the cold either, like my mother in law does when she runs out of freezer space :-D
It DOES help to keep the baking and calorie excess to a tolerable level though :-D LOL.
