Here's my version of the WW soup

I'm an all or nothin' girl especially when it comes to food.
In the past, I've eaten the same food item for breakfast and lunch each day.

Boring?

Yes!

But having kids and trying to get them fed and ready for naps, it is one thing I never have to stress about. I am definitely not that girl who can just skip a meal...never could. So I go in stages, there was a taco salad stretch, then the spinach with strawberries, red onions and lite poppyseed dressing stretch, followed by the tuna on a whole wheat piece of toast and now since I was ready for a change again...I decided to make an ol' favorite...but change it up for fear I may become bored again.

Here it goes my ww soup...

*Saute a large onion chopped small, 3 celery stalks(chopped) and 3 carrots coined in a dutch oven with 1 tbsp of oil.

*Once they start looking transparent, I toss in a large can (3 cups or so) of whole tomatoes (crushed up a bit) and one tetra (litre or so) of 25% less sodium chicken broth and 3 cups chopped cabbage.

*Let it simmer on low heat for about 1/2 an hour or until veggies are tender.

I like to add lots of crushed peppercorns!

Makes enough to last my lunches during the week. My understanding is 1 cup is 1 point. Seeing as though I have missed placed my ww booklets...I can't completely remember.

Would you agree that a yummy dessert is necessary?

I got this recipe from my cousin's wife last year. If you are following WW and want a treat, try these 1 point brownie muffins...mmmmmmmmmmmmmmmm.....

1 box of low fat brownie mix

1 1/2 tsp baking powder
3 cups all bran, no name works fine

2 1/2 cups water

Mix the all bran and water and let sit till mushy, around 10 minutes.Then add brownie mix and baking powder and stir together.You can make approximately 17 muffins, so then they're 1 pt each. And yes, you can make them bigger...just the points get larger.

Bake at 350 for around 20 minutes.

At first they will appear crunchy on top but once you put them in a container they soften. You may want to freeze them to #1. avoid eating them all at once and #2. they tend to mold if they sit too long.

Oh, did I mention 1 point?!?

I have never joined ww nor am I counting points daily. I do love learning how the foods I eat affect me. For me, food is social. I don't prefer to eat alone...but it tends to happen that way. So if I eat healthy and in moderation daily and I see a cheesecake, I want to feel the freedom to say yes to it without the guilt!

But...I'm just learning!

First of all...YUM! Second, my sister and mom and I are having a contest to see who can lose 25 lbs by September. We are going to go away for the weekend if we all lose the lbs together. Now I have one up on them. Thanks!

i have found that eating this soup one meal a day/week sheds off at least a lb if not two...depending on how many treats I allow!
way to go with the 25 lbs shed...I hope you win!

Such a great idea about the lunches. Sigh, I have no ideas and there are just some easy fixes for lunch that we can't get here. And that your receipts are low in fat, woohoo! Thanks for the tips Annie.
