I have tweaked an amazing recipe for granola bars. It is so yummy and tastes very similar to the store bought variety. It's perfect for snacks and lunches...but just a warning, it does contain peanuts.
Here's the recipe:
2/3 cup honey
1 tbsp corn syrup
3/4 cup low fat peanut butter
3 cups rolled oats
1/2 cup sunflower seeds
1/4 cup chopped almonds
1/4 cup raisins (or more)
1 cup cornflakes (lightly crushed)
1/3 cup chocolate chips
In a microwave safe bowl, boil honey and corn syrup for 2-3 minutes.
In a large bowl, place grains, seeds, dried fruit, cereal and nuts.
Stir in honey mixture until completely coated.
Add chocolate chips last while mixture is cooling to avoid melting.
Press into a 7"X 11" pan.
Cool completely before cutting.

My mouth is watering....must find corn syrup or something like that. Can't wait to try the recipe. Kids lunches? If they make it past midnight snack!
This is great! I had just been thinking how I would like an easy granola bars recipe. I will be testing these out sometime soon. :)
