It's early and kiddos are just sitting down to breakfast. It's important to have them busy or they will be willing helpers...and today I just wanted to get this off my list. Eggs are blending with the brown sugar and I notice milk has spilled on the table, the chair and the floor. I quickly wipe the mess. I add the oil, applesauce and vanilla. I hear a chair noisily coming closer to the mixer. Two kiddos, at this point, are fighting for the best spot on the chair...and both spots are ideal in my mind. I'm out of flour so I need to refill my flour bin. I hear the baking cupboard opening and finally get their attention enough and their promise not to 'add the next ingredient without momma's help'. Flour bin gets filled, measured and I notice that my helpers have spoons and want to stir. I let them stir the dry ingredients and just as quickly, I start wiping half of it off the chair and floor. I preheat the oven and realize I forgot to respond to an email...so muffins are mixed, oven is warming, I start typing only have have someone chatting to me about something deeper than I can handle at that moment. I look over down the hall and see another kiddo crying on a bed. Muffins are in, chatting friend is waiting, helpers with spoons don't understand why they can't double dip their spoons in batter, and kiddo is crying. I cuddle sweet child, who I find out, is bawling over killing a mosquito and feels incredibly guilty. Timer is going off, friend is still chatting and my two helpers are now trying to 'help' wash the dishes. There were several other things on the go like broken diapers and phones ringing but when those muffins came out of the oven....I remembered the reason why I baked them...the smell and taste is out of this world.
Here's the recipe...hopefully, you can just stir and bake yours!

y Muffins
(this makes a double batch)
4 eggs
1 1/2 cups brown sugar
1/3 cup oil
1/3 cup applesauce(unsweetened)
1 tsp vanilla
4 cups flour
1 tsp salt
1 tsp baking soda
1/3 cup bran
2 cups sour cream (I mix 2 tbsp vinegar and milk to fill 2 cups)
2 cups blueberries (mine are frozen)
Beat eggs, sugar, oil, applesauce and vanilla. Stir dry ingredients into egg mixture, alternately with sour cream. Gently fold in blueberries.
Bake at 375* for 20 or so. Makes 24 muffins.
They freeze well too. Oh so good!

Whew! Kudos to you, the Multitasking Mama! Those muffins sound wonderful, but in order to avoid all of the above, I plan to make them at 2 a.m.
